It was invented in Extremadura in 1798.
Who created the potato omelette?
The legend says that the general Tomás the Zumalarcárregui in Bilbao during the carlista war gave Spanish omelette to the hungry soldiers because potatoes and eggs are very nutritive.

HOW TO COOK:
- Peel, wash and dry the potatoes.
- Cut them into thin slices and place them in a deep frying pan with olive oil at medium temperature so that they cook slowly.
- Beat the eggs .
- Mix the potatoes and eggs.
- Cook the mixture in a pan.
- Flip the omelette to cook both sides.
